    Brief of Honey Ham

    Honey Ham was authorized to be one of 36 Hangzhou Famous Dishes by Zhejiang Province in 1956. It’s a sweet dish which uses the best part of Jinhua Ham — a local food, also the best ham in China, which made it an expensive dish in ancient times.

    Jinhua Ham (Jinhuahuotui in Chinese) originated from the Song Dynasty (960–1279 AD). It’s widely welcomed across China because of its carefully-selected ingredients, unique processing technology, and excellent flavor. As the folk legend prevailing in Zhejiang province goes, one of Song’s national heroes, General Zongze, brought Emperor Gaozong (the tenth emperor of the Song Dynasty of China) some Jinhua Hams from Yiwu City, Zhejiang province. Impressed by Jinhua Ham’s fire-like color and flavorsome taste, Emperor Gaozong bestowed it the name ‘JinhuaHuotui’ (Huotui literally means fire ham). Jinhua Ham played an important role in ancient Chinese cuisine. During the Song Dynasty and Ming Dynasty, it served as a crucial ingredient to many delicacies which were only intended for the emperors.

    Honey Ham is cooked by steaming Jinhua Ham with rock candy. Plums, cherries, lotus seeds and osmanthus flowers are also added to enhance the color and taste. Sweetness mixing with the salty flavor of Jinhua Ham really produces a unique and unforgettable flavor.
